Among the many benefits of the increased trust that evolves through nurturing long-term relationships with coffee producers is the potential for hands-on cooperation at the farm level. In the case of the organic Finca Santa Elena in El Salvador, we've been working with Don Fernando Lima for several years now. And, after tasting his coffee for the second year in a row, we knew this was a great farm and person with whom to grow our partnernership.
 
Last year, we asked Don Fernando to separate some of his production by coffee variety. Pacamara is a hybrid of El Salvador's Pacas variety and the gigantic-bean Maragojipe variety, created in San Salvador in 1958. A Salvadoran Pacamara, therefore, is a classic expression of the variety. This year, Don Fernando Lima separated his Pacamaras for us, giving us a glimpse at the pure varietal character of the coffee: Santa Elena Pacamara Microlot offers savory spice notes reminiscent of dried fruit, especially fig.
