This year, we focused on the La Voz cooperative in Lake Atitlán, Guatemala, to produce a few great lots for our decaffeinated offerings. We decaffeinate this coffee using a natural organic water process in small batches that only last us a short time—which keeps this coffee very fresh and tasting its best. Though there are not that many organic growers in Timbio—and the greater region of Cauca, Colombia—the members of the Orgánica cooperative have shown immeasurable strength over the eight years we have worked together.
