In 2005, a group of producers in Cauca, led by community organizers Nelson Melo and Liliana Pabón, came together to establish the Orgánica cooperative. Their primary goals were to gain recognition for their organic coffee and to promote a collective dedication to sustainable production practices. Our collaboration with them began in 2007, two years after their formation. Since then, we look forward to the annual return of their flagship product, La Golondrina, to our menu, and it is our most popular single-origin offering.
Orgánica’s 150 members are located in Cauca, southwestern Colombia, scattered across the villages of Timbio, Guayabal, and Piendamó. Their farms range in size from one to 20 hectares. The growers of La Golondrina prioritize quality and sustainability over the traditional emphasis on quantity and productivity commonly seen in Colombian coffee production. Their dedication to producing high-quality, certified-organic coffee is inspiring and the result is undeniably delicious.
This season, Orgánica took a bold step by bringing the quality assessment and commercialization of the group’s coffee in-house—tasks that had previously been outsourced. While this shift introduced some uncertainty, it also gave us the opportunity to rethink our role and double down on our values of trust-based sourcing. By trusting the coffee-producing community to guide the strategy, we found the courage to make a meaningful change. Together, we continue to build lasting value, one season at a time.

Water: 500 grams of filtered hot water (200 F)

1: Heat Water
Heat water to 200F. Place filter in the Kalita Wave and rinse with hot water, discarding when finished.
2: Grind Coffee
Weigh 30g of coffee and grind on medium setting, slightly finer than kosher salt.
3: Add Coffee
Place ground coffee in filter, and shake to level grounds.
4: Bloom Grounds
Start a timer and pour 60g of water to wet all the coffee grounds.
5: Begin Brewing
Wait 30 seconds and then pour water in a circular motion to 200g.
6: Pour Water
By 1:00 the water should have drained a centimeter, pour in a circular motion to 300g.
7: Repeat
Repeat this process every 30 seconds, or as the water drains a centimeter, pouring water in a circular pattern until reaching a total weight of 500g.
8: Drain
The coffee should finish draining by 3:30-4:00.
