Born and raised among coffee plantations, Max Pérez understood both the risks and potential of the coffee industry long before starting a farm. Driven to “make their coffee dreams come true,” he and his wife, Claudia, founded Finca La Hermosa in 2010. Situated on the slopes of the Acatenango volcano, the coffee farm benefits from fertile soils that nurture a diverse range of coffee varieties. This lot is a separation of their Pink Bourbon, exhibiting bright red plum flavors balanced by milk chocolate sweetness.

Pacamara originated in El Salvador by crossbreeding the local Pacas variety with Maragogipe, a cultivar known for its large seeds and bold fruit flavors. This distinctive hybrid has become synonymous with high cup quality in the country and remains a staple of Salvadoran specialty coffee. Fernando Lima of Finca Santa Elena, honey processed his Pacamara variety selection this year. Halfway between a washed and natural processed coffee, this honey processed lot maintains the variety character of Pacamara while enhancing its fruit qualities. Lively tangerine and green apple flavors are softened by a sweet creaminess that rounds out the cup.
