Pablo Cordoba grew up around coffee farming, but for many years grew other crops seeking better economic opportunity. In 2016, he returned to coffee farming, partnering with Toldopamba, which offers higher prices for higher-quality coffee. Motivated by this, Pablo began experimenting to maximize quality on a six-hectare farm. By separating the farm into single variety plots, Pablo can harvest varieties separately, gaining valuable insights into their performance in his unique microclimate.
Pablo also experiments with processing, utilizing an extended underwater fermentation method that intensifies fruit flavors while limiting the risk of over-fermentation. He shares these insights with his neighbors, raising the bar for quality in the region. Additionally, Pablo coordinates the transportation of coffee for his community, ensuring they receive the quality premiums they deserve from Toldopamba.
Toldopamba Coffee, founded by Carlos Torres Burbano and Angela Patiño Findlay, supports smallholder coffee producers in Nariño to improve the quality of their coffee, implement more sustainable agricultural practices, and access premium prices. We source high-quality regional blends for our Year-Round products and premium lots like Pablo Cordoba’s and those from the Santafé group. Toldopamba’s high level of traceability has allowed us to hone in on some of the most exceptional producers in this region over time.
