If you’re hungry for an apple, you might reach for a red delicious or a gala, depending on what taste you’re craving. Similarly, coffee has varieties that impart flavors. But a Bourbon-variety plant grown in El Salvador can taste different from one grown in in Peru because the soil and climate contribute different qualities.
The commercial production of coffee is only a century old. As such, coffee plant morphology and its impact on coffee quality is still very young. And there are new developments each day. As science and research begin to catch up, we will discover and share much more about plant lineage and terroir—and what we can deduce about each of these as it relates to coffee quality.
