A Blackberry + Spice Cappuccino

A Blackberry + Spice Cappuccino

A warm steamed drink with winter spices and deep, complex sweetness. 

The Zest Intentions Recipe

Preparation time for ingredients: 1-1.5 hours (including cooling time)

Ingredients

  • Double shot of espresso (we recommend Field Trip or Big Trouble)
  • 6 oz Orange Spiced Milk
  • 1/2 oz Blackberry Syrup

Orange Spiced Milk

  • 1/2 gal Whole milk (or alternative of choice)
  • Zest of 1 Large orange
  • Pinch of Ground cinnamon
  • 2 Star anise pods (substitute: cloves)
  • 2 Tbsp Fine white sugar
  • 1/4 tsp Vanilla bean paste (substitute: vanilla extract)

On low heat, warm the mixture slowly to 140–150°F (60–65°C) allowing the flavors to meld without scalding the milk. Strain out the solids and cool the milk rapidly in an ice bath to preserve freshness and bring it back to 40°F (4°C). When cooled, store in the refrigerator for steaming later.

Store in an airtight container/bottle and refrigerate for up to three days.

  • Blackberry Syrup

    • 16 oz Rich Simple Syrup
      • 2 parts Sugar
      • 1 part Water
    • 2 cups Frozen blackberries
    • 1 Tbsp Lemon juice (optional)

    Prepare the simple syrup:

    In a small saucepan, combine the sugar and water, simmer on low heat until all the sugar is dissolved. If you prepared more than 16 oz, set any extra aside.

    Prepare the blackberry syrup:

    In a small saucepan, add 2 cups of frozen blackberries to 16oz of rich simple syrup. Simmer gently over low heat for 10 minutes, mashing the berries with a whisk to release their juices. Strain the mixture through a fine mesh sieve to remove solids. Let it cool. (Speed up by using an ice bath.) Store in a clean bottle. Optional: Add a splash of lemon juice during simmering to brighten the syrup and enhance the blackberry’s natural tartness.

    Store in the refrigerator for up to two weeks. 

    Instructions

    1. In an 8oz cappuccino or 12oz latte cup, add a 1/4–1/2 oz of blackberry syrup
    2. Pull a shot on top of the syrup
    3. Steam 6–8 oz of orange spiced milk (shake before use) and pour into the espresso and syrup mixture.

    Feel free to adjust espresso, syrup, and milk ratios to your liking. Enjoy!

    This drink can be easily batched up to accommodate a cafe setting.
