A decade ago, an experimental natural-processed coffee from the area surrounding the Idido village changed what we—and much of the coffee industry—have come to expect from Yirgacheffe and natural coffees in general. Ripe cherry selection, a focus on sorting, and better drying techniques have time and time again made natural sundried coffees from the Idido Cooperative our favorite—showcasing notes of strawberry, dried fruit, and bittersweet chocolate. A few years ago, we helped start a project in the community of Biloya to work with individual farmers to produce specially-prepared natural sundried coffees. Miju Sali and his family were among the first in the area to be a part of the project. Miju and his family improved almost every aspect of their coffee processing this year and produced a beautiful coffee with notes of blueberry and blackberry, accentuated by a nice bittersweet chocolate aftertaste. Each year as the holidays approach, we create a special, limited-edition holiday coffee dedicated to celebration and good cheer. We donate a portion of proceeds from every pound we sell to organizations doing important work in the communities where we source coffee—to complete the cycle of good works, good cheer, and great coffee.
